Homemade Girl Scout Cookies: Tagalongs, Samoas, Trefoils, Thin Mint : Baking
Please do support your local Girl Scout Troops but when they stop selling in a few months you will have these. Basic shortbread for the Trefoils, Samoas, and Tagalogs: 1 c. butter, room temperature 1/2 c. sugar 2 c. all purpose flour 1/4 tsp. baking powder 1/2 tsp. salt 1/2 tsp. vanilla extract 2 tbsp. milk Cream sugar and butter. Then alternate dry ingredients mixture with milk and vanilla mixture. Refrigerate until firm then roll onto WELL floured surface, 1/4 inch thick. Cut into desired shapes, I used doughnut cutter for Samoas. Bake 350 for 10-12 minutes. For Trefoils: Sprinkle with sugar. For Samoas: 15 oz soft caramels 3 tbsp. milk 3 c. toasted shredded coconut 24 oz. semi-sweet chocolate Melt caramels and milk in microwave, 2-3 minutes. Stir in coconut. Coat cookies. (work fast or reheat in microwave as needed) Cool in fridge to set. Melt chocolate in double boiler. Dip bottom of cookies using fork then drizzle tops.
